Prep time 20 minutes Bake time 20 minutes
2 Cups chopped cooked Chicken or Turkey 1 Cup chopped Green bell peper 1 Pkg (8 ounces) Cream cheese, cubed 1 Jar (8 ounces) Salsa, divided 8 (6-inch) Flour tortillas 3/4 pound (12 ounces) Velveeta, cut up 1/4 Cup Milk
1. Stir chicken, bell peper, cream cheese, and 1/2 cup salsa in saucepan on low heat until cream cheese is melted.
2. Spoon 1/3 cup chicken mixture down center of each tortilla; roll up. Place, seam side down, in lightly greased 12 X 8-inch baking dish.
3. Stir Velveeta and milk in saucepan on low heat till smooth. Pour sauce over tortillas; cover with foil.
4. Bake at 350 degrees for 20 minutes or until thoroughly heated. Pour remaining salsa over tortillas.
Helpful tips: If your flour tortillas are a little too stiff to roll up easily, wrap them in a damp paper towel and warm in the microwave for a few seconds.
Spray foil with cooking spray to prevent foil from sticking to tortillas.
Makes 4 to 6 servings
