Ingredients Chocolate Mousse 2 large avocados 2/3 cup cacao powder 3/4 cup agave nectar Vanilla Cream 1 1/2 cups raw cashews, soaked for up to 2 hours 1/3 cup coconut oil, warmed to liquid 1/3 water 1/3 cup agave nectar 1 teaspoon vanilla extract Directions Chocolate Mousse Blend all ingredients in a food processor for a minute or so until it reaches a smooth, pudding-like consistency. Scoop into a bowl, cover and chill. Vanilla Cream Blend all ingredients together in a high powered blender (like a Vitamix) and process until smooth. Scoop into a bowl, cover and chill for 2 hours or until it firms up. Once the vanilla cream has firmed, layer the ‘puddings’ in a small glass with a spoon or a pastry bag, alternating flavors. Tip: a plastic sandwich bag with the tip cut off works too! This dessert is not only super easy to make, it’s also a fun conversation starter. Just be sure to wait until they take the first bite before you tell them they’re actually eating avocados! Attachments:
